
How Destilería D&S Was Born: The New Project From Las Violetas S.A.S.
In February 2025, as a family, we made a decision that would change the direction of many years of work: finding new ways to add value to the fruit that had been tied to our name for so long. That moment marked the birth of Destilería D&S · 43°Sur, the project through which Las Violetas S.A.S. — our family's fruit-growing business in Gaiman, Chubut — decided to go beyond the harvest. The name is no accident. D&S stands for the union of two surnames, Domínguez and Sánchez, the roots of our family and of every project we've taken on since. Behind those two letters are generations of work in the fields, and from this moment on, a still as well. Until then, Las Violetas S.A.S. focused on growing and harvesting export-quality cherries on our farms in Gaiman. With the creation of D&S, that same fruit — which for years had only ever left our fields in crates — gained a new possible destination: becoming crafted spirits, without ever leaving the hands of the same family that grows it. This news marks, in fact, the starting point of everything we went on to share afterward: the machinery arriving later that same year, the first distillate, the first award.
