This is the story of a Patagonian family that started out planting cherry trees and ended up distilling what that land gave back. From the first cherry tree in 2000 to today's Destilería D&S, every stage of this journey was built together: Walter, Sara, Julia, and Simón, on the very same farm in Gaiman where it all began.
In 2000, Walter and Sara took on what seemed at the time like a risky bet: leaving behind what they knew to plant the first cherry trees on a farm in Gaiman, in the Chubut River Valley, in our Argentine Patagonia. There wasn't much of a cherry-growing tradition in the area; what there was, above all, was a willingness to try and the conviction that this land had something to give. A cherry tree only starts to be productive from its fourth year, so those first years were, above all, years of patience, with no guarantee the bet would pay off.
For more than two decades, that bet became everyday work. We grew and harvested cherries for the fresh market, learning a little more every season about the climate, the soil, and the rhythms of this Patagonian land. Along the way, Walter and Sara raised their two children, Julia and Simón, among the rows of cherry trees: the farm grew alongside the family.
In early 2025, now four partners in the family business's outlook, we decided to take another step forward. After so many years growing cherries to sell fresh, we set out to find other ways to add value to our fruit, and that's how Destilería D&S — also written DyS, as in our domain destileriadys.com — was born: our family distillery (Domínguez Sánchez), created to turn what had until then only been sold in crates into high-quality spirits.
With the project now underway, we've added other fruits to our production, looking to expand beyond what started out as just cherries. Walter, Sara, Julia, and Simón still work the same farm in Gaiman where it all began in 2000 — now with a distillery that carries our family's name and the character of this corner of Patagonia.
Las Violetas S.A.S. is the family business that has grown cherries in Gaiman since 2000. D&S Destilería is the brand under which that same company turns its fruit into crafted spirits.
