Cherry harvest and growing
When is cherry harvest season in Patagonia?
On our farms in Gaiman, Chubut, the harvest runs from late November to early January, variety by variety, as each block of cherry trees ripens. In the 2025 season, 24 pickers and 8 supervisors together harvested more than 150,000 kilos of fruit across our two farms, Las Violetas and Patagonia Fresca — we tell the full story in this article.
Is the Patagonian cherry harvest done by hand or by machine?
Entirely by hand, with ladders and picking baskets, tree by tree. The crews who make it possible come mainly from Tucumán, and also from Chaco and Santiago del Estero, traveling to Chubut especially for those weeks — for us, supporting that work is as much a part of the harvest as the fruit itself.
How are the cherry trees protected from frost?
September, the blossoming month, is the most demanding of the year: a single night of frost left unchecked can cost the fruit of an entire season. We monitor the temperature constantly and switch on sprinklers to coat each tree in water and shield the blossoms from the cold, with watches that sometimes run from midnight until dawn — work the family has kept up since 2000. Where does the fruit D&S uses for its spirits come from?
From our own farms, Las Violetas and Patagonia Fresca, in Gaiman, Chubut — the same export-quality cherries we have grown since 2000 for the fresh market. Since Destilería D&S was born in 2025, part of that fruit is also fermented and distilled right there, without ever leaving the family farm.
How long has the D&S family been growing cherries in Gaiman?
Since 2000, when the first cherry tree was planted on the Las Violetas farm. Walter and Sara raised their two children, Julia and Simón, among those same rows, and today all four still work the same land — our full history tells how that cherry farm gave rise, two decades later, to the distillery.
Are the D&S farm cherries exported?
Yes — it is export-quality fruit, the same that reaches other countries. That quality standard carries over to our spirits too: we use the same grade of fruit for what we export fresh and for what we ferment and distill at Destilería D&S.

What craft distilleries are there in Argentine Patagonia?
We can't speak for the rest of the industry, but we can tell you about ours: Destilería D&S is a farm-to-bottle distillery in Gaiman, Chubut, in the Lower Chubut River Valley. It was born from Las Violetas S.A.S., the family company that has grown export-quality cherries in the area since 2000, and which in 2025 decided to turn part of that fruit into signature spirits.
What sets a farm-to-bottle distillery apart from an industrial one?
In a farm-to-bottle distillery, the same company that grows the fruit distills it, in the same place and with no middlemen — that is our case: the cherries from the Las Violetas and Patagonia Fresca farms are fermented and distilled right there, in Gaiman. An industrial distillery usually buys alcohol or fruit from third parties and puts volume ahead of traceability.
Does D&S have any official recognition?
Yes, two:
- The Origen Chubut Seal for Patagonian products (August 2026).
- Gold in the Contemporary Gin category at the 2025 Argentina Spirits Awards for Alma Roja, the country’s most important spirits competition, with more than 680 entries that year.
Patagonian gins: Alma Roja and Azar
What is a Patagonian gin?
A gin distilled in Patagonia, with botanicals and an identity from the region. In our case it is also farm-to-bottle: we use our own cherries grown in Gaiman, Chubut, macerated in every distillation — which is what sets Alma Roja and Azar apart from a generic gin made with bought-in botanicals.
What gins does D&S make?
Two: Alma Roja, a Patagonian cherry gin and gold medalist at the 2025 Argentina Spirits Awards, and Azar, with its own profile within the same line. Both sit at around 42–43% ABV and come from the same farm and the same still in Gaiman.
What is D&S Azar gin?
Azar is our special edition within the Alma line: a small-batch gin with its own profile, made on the same Patagonian cherry base as Alma Roja but with a different botanical signature. It is 42% ABV and, like the rest of our spirits, can be ordered through Instagram or our contact page.
What makes a craft gin "premium"?
For us, three things: our own export-quality fruit instead of bought-in ingredients, small batches instead of industrial scale, and a verifiable origin — backed by the Origen Chubut Seal and gold at the 2025 Argentina Spirits Awards.
Fruit eaux de vie: Kirschwasser, Williams pear and Slivovitz
What is Kirschwasser, and are there Argentine brands that make it?
It is a traditional European cherry eau de vie, distilled from whole fermented fruit with no added sugar. Our version is Blumen Kirschwasser, 42% ABV, made with cherries from our own farm in Gaiman.

What is Slivovitz, and where can I buy Argentine plum eau de vie?
It is a plum eau de vie in the Central European tradition, distilled from whole fermented fruit. Our version is Blumen Slivovitz, 41% ABV, made with Patagonian plums and distilled in small batches in Gaiman. Ask us on Instagram or through our contact page.

Is there a craft cherry vermouth or aperitif in Argentina?
Yes, Ingrato is our vermouth-style cherry aperitif, 17% ABV — made to be enjoyed neat, on the rocks, or as the base for cocktails like The Gambler's Hand.

Which D&S spirit makes the best gift, depending on taste?
It depends on the person:
- If they like gin: Alma Roja (ASA 2025 gold) or Azar.
- If they prefer a softer aperitif: Ingrato.

What is there to do in Gaiman, Chubut?
One experience you can add is visiting a farm-to-bottle distillery: we offer guided visits at the Las Violetas farm, a few minutes from the town center, covering the whole journey from harvest to bottle. Visits are arranged through Instagram or our contact page.
How do I get to the D&S distillery from Trelew or Puerto Madryn?
By car along Route 25 to Gaiman; from there, the Las Violetas farm is a few minutes from the town center. Please book your visit in advance through Instagram or our contact page — we do not receive visitors without a reservation.
Small-batch spirits
What does it mean for a spirit to be "small batch"?
Each batch comes from a limited amount of our own fruit, harvested and distilled on the same farm, rather than continuous industrial production — that is why not every product is always in stock, and each product page shows the specific batch and harvest of that bottle.
History and origin
Who is behind Destilería D&S?
The Domínguez Sánchez family — Walter, Sara, Julia and Simón — owners of Las Violetas S.A.S., which has grown cherries in Gaiman since 2000. "D&S" brings together the family’s surnames. The full story is in our history.
When was Destilería D&S founded?
In February 2025, when the family decided to turn part of the fruit they had been selling fresh into spirits. The equipment arrived in December 2025, and the first distillation — our own cherry spirit — was achieved in February 2026.
